Red Tomato Relish

With the fantastic abundance of tomatoes at the moment, I can't just make pickles with yellow tomatoes, there are red tomatoes to deal with too! So I've been making this sweet, aromatic tomato relish.





This relish takes a lot of onions giving it sweetness, while the coriander seeds and mint make it moreish and fragrant.

RED TOMATO RELISH

1 kg onions
1 fresh chilli
4 large garlic cloves
1 tablespoon celery seeds
1 tablespoon coriander seeds
400 ml apple cider vinegar
1 kg red tomatoes
200 g sugar
handful of mint

Chop the onions, chilli and garlic and put in a saucepan. Add the celery seed, coriander seed (lightly crushed) and vinegar. Bring the mixture to the boil, then simmer for 15 minutes.

Add the tomatoes and sugar, then simmer until the tomatoes cook and the mixture thickens, about 30 minutes.

In the meantime wash and sterilise 6 small/medium jars. When the relish is ready, stir in the chopped mint and bottle immediately
